Steak Fajita Skewers
Ingredients
· 1 lb. sirloin steak, cut into large cubes
- 1 bunch scallions, cut into thirds
- 1 pack small flour tortillas, torn into large pieces
- 4 large bell peppers, cut into large pieces
- 8 skewers, soaked in water for 20 minutes
- Extra-virgin olive oil, for drizzling
- kosher salt
- Freshly ground black pepper
Directions
- Preheat grill to medium-high. Skewer steak, scallions, tortillas (folded), and peppers. Drizzle with olive oil and season with salt and pepper.
- Grill, turning occasionally, until steak is medium rare and vegetables tender and slightly charred, about 7 minutes.
Cajun Shrimp Kebabs
Ingredients
- 1 lb. shrimp
- 2 tbsp. olive oil
- 1 tsp. kosher salt
- 1 tsp. cayenne
- 1 tsp. paprika
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. oregano
- 2 lemons, sliced thinly crosswise
Directions
- Preheat grill to medium-high.
- Make Cajun spice mix. Combine salt, cayenne, paprika, garlic powder, onion powder and oregano in a small bowl. Stir with a fork until evenly combined.
- In a medium bowl, toss shrimp in olive oil. Add spice mix and toss shrimp until it’s evenly coated. Thread shrimp and lemon onto metal skewers (or wooden skewers that have been soaked for 20 minutes).
- Grill skewers until shrimp is opaque and lemon is charred, about 4-5 minutes total, flipping once halfway.
Grilled Summer Fruit Skewers
Ingredients
- 6 peaches, sliced
- 1 pt. Strawberries, sliced
- 1 pineapple, cut into large cubes
- 8 skewers, soaked in water for 20 minutes
- Extra-virgin olive oil, for drizzling
- kosher salt
- Honey, for drizzling
Directions
- Preheat grill to medium-high. Skewer peaches, strawberries, and pineapple. Drizzle with olive oil and season with salt.
- Grill, turning occasionally, until fruit is tender and slightly charred, 10 to 12 minutes.
- Drizzle with honey.
